Lambic - Cherry

This is truly a connoisseur's beer.  It has tons of fruit flavor and aroma, with a tart sourness that comes from the presence of lactic acid bacteria in the fermentation.  The recipe includes over 6 pounds of sterile, seedless cherries, which saves you lots of time compared to removing seeds and crushing the fruit yourself. There's also four ounces of premium natural cherry flavoring, a packet of pectic enzyme, and a pound of Belgian candi (beet) sugar.

Notes on Yeast:

If you choose Wyeast live yeast, it includes yeast plus three strains of wild-type lambic bacteria. This is the best option but the bacteria are very slow.  Expect to leave the beer in secondary for 3-4 months.  (By the way, your equipment will not be "permanently infected" with lambic bacteria.  It's easy to sterilize when you're done.)

If you choose Fermentis dry yeast, the beer will not develop sourness.  That's not necessarily a bad thing but it is very different.

Notes on Sweetness:

If you use natural bottle conditioning with priming sugar, the result will be a dry tart flavor similar to Liefmans™ lambic beers.  There's no good way to sweeten bottle conditioned beer, because the yeast will just eat the extra sugar resulting in overcarbonation.  (Don't try sweetening with unfermantable sugars because (a) they're not very sweet, and (b) the bacteria will eat them.)  If you prefer your Lambic sweetened, just make a sugar syrup and sweeten the beer right in the glass when serving it!

If you keg your beer, you can sweeten your Lambic before sealing the keg.  We recommend using white or red grape juice concentrate from the grocery store, plus 2.5 teaspoons of potassium sorbate.  Sweeten to suit your taste, and feel free to experiment with other fruit juices & sugars!  Refrigerate after sweetening because the bacteria are slow but persistent... even with the sorbate.  The results will be in the style of Lindemans™ lambic beers.
