Yerba Mate

Yerba Mate is known for its slightly astringent bitter taste because of the high tannin content of the leaves. While its flavor is strong and vegetal it is extremely distinctive. It is known for its ability to add caffeine to drinks. 

It has traditionally been a South American drink but is slowly making its way into beers even here. It has been used in IPAs and Honey Ales. 

We recommend using 1/2 lb. of Yerba Mate per 5 Gallon directly in the mash if you are looking to add about 1/2 cup of coffee caffeine to each beer.

It can also be used as a hop alternative due to its strong bittering qualities.
