Clarity Ferm WLE4000
White Labs Clarity Ferm (WLE4000) has two brewing purposes:
- Eliminate the appearance of chill haze, while also increasing the shelf life of packaged beer
- Significantly reduce the gluten in beers brewed with barley and wheat
It is an easy to use enzyme that will eliminate chill haze in beer. It serves as an alternative for clarifying and stabilizing the appearance of beer. The enzyme that helps break down the sensitive (haze-active) polypeptides that create chill haze is very specific, so the reaction will not affect any other beer parameters, like flavor and aroma.
There are many additional benefits to using Clarity Ferm including cost savings, enhanced efficiencies and innovation proven to reduce gluten. This significant reduction in gluten content in beers made with barley and wheat is a fantastic addition of this product. Clarity Ferm treated beer made from barley or wheat will typically test below 20 ppm of gluten, which is the international threshold for brewing considered "Gluten Free".
It can be used in combination with all types of brewing materials. To use it simply add it when pitching yeast and the Clarity Ferm will do all its work during fermentation. Once fermentation is complete, the possibility of chill haze occurring will be eliminated and you will have a stable and clear beer.
