White Labs Torulaspora delbrueckii (WLP603) is a vault strain, meaning it has a limited availability. It is a strain of non-conventional brewing yeast. It is a maltose negative strain which makes it ideal for low-alcohol beers or to be blended with another higher attenuating strain. It will not and does not ferment maltose or other larger sugars and will only ferment glucose, sucrose, and fructose.  This particular strain was isolated off of apples from an island in Norway. This strain would be categorized as a wild yeast, this strain would not typically be considered to be a beer spoiler as it doesn't have the ability to ferment larger sugars. Note: Using this strain to create a low alcohol beer requires a modified recipe. STA1: Negative.

The profile has a high ester production and will lend itself well to styles such as a fruit-forward IPA or a Saison. It would also work well in a Gose. 

It will also work wonderfully in a Cider, an English Cider, or even in a Sauvignon Blanc.
