Weihenstephan Weizen 3068
The Wyeast 3068 Weihenstephan Weizen is the classic and most popular German Wheat Beer yeast strain used worldwide. It will produce a beautiful and delicate balance of banana esters and clove phenolics. The balance of esters and phenols can be manipulated towards ester production by increasing the fermentation temperature, increasing the wort density and decreasing the pitch rate. Over pitching can result in a near complete loss of banana character. Decreasing the ester levels will allow a higher clove character to be noticable. While sulfur production is common it will dissipate with conditioning. It is a very powdery strain and will remain in suspension for an extended amount of time following attenuation. This is a true top cropping yeast and requires extra fermentor headspace of at least 33%.
