CL23 Premium Wine Yeast

Mangrove Jack's CL23 is a White Wine yeast is a great multi-purpose strain that has a very neutral sensory impact, letting the only aroma come from the grapes/fruit only. It is fast fermenting and is highly robust, meaning it will tolerate difficult fermentation conditions and alcohol levels up to 18%. 

The fermentation will complete to dryness and will result in wines that are crisp, dry and rigidly structured, creating wines with a low to medium body. The low to medium body is due to the low glycerol production and lack of residual sugars. It is a low fusel oil producing strain.

It is the perfect choice for most wine styles but really shines when used in White, Blush and Sparkling Style Wines.

 

Optimal Temperature Range: 57-90F

Alcohol Tolerance: 18%
