CY3079 Wine Yeast
This strain is the ideal choice for Chardonnay and/or lees aging, which is when you let the wine age on the fermented dead yeast. It will produce pineapple, floral, toasted bread, honey, and almond when you allow it to age on the lees.
It has a short lag time and will have optimal expression when fermented at 59 to 77 degrees F. It does require nutrients to be successful.
It has an alcohol tolerance up to 15%. Use 1 gram per gallon.
