This Hybrid Saison-Style yeast is a non-diastatic hybrid that has been selected to make saison-style and farmhouse style beers. It is the result of research and development work of Renaissance Yeast in Vancouver, BC Canada. It was selected using the most advanced breeding techniques.

This R&D team used classical and non-GMO methods to remove the STA1 gene, responsbile for the daistatic activity of Saison yeasts while taking care to retain normal brewing sugar utilization in order to produce dry saisons. 

Additionally, patented technology from University of California - Davis, ensured that the strain will not produce sulfurous flavors, thereforse enhancing the saison yeast aroma characteristics.

It is a vigorous fermenter that can be finished in 5 days and has a high attenuation and low flocculation.

This strain is a Saccaromces cerevisiae top fermenting yeast. Contrary to traditional saisons trains this hybrid yeast strain lacks the STA1 gene and therefore dextrins will not be metabolized and there is no risk of over attenuation and over carbonation after packaging.
