Omega Yeast's OYL-500 Saisonstein® is an Omega-original hybrid yeast strain. It is a genetic hybrid of two different Omega Saison Strains, the French OYL-026 and the Belgian OYL-027. This strain is versatile and aromatic, plus attenuative while maintaining a silky mouthfeel. It really excels in high gravity and it will ferment more reliably and thoroughly than either of its parent strains.

It is a spicy, complex, tart, dry and crisp strain that has some bubblegum character, stemming from its Belgian parent. There are more fruit and fewer phenolics than its French parent, ultimately creating a truly sensational strain. The attenuation of this strain is phenomenal with 80-90% or more!

Alcohol Tolerance: 11%

 

This strain tests positive for the STA1 gene, an indicator of Saccharomyces cerevisiae var. diastaticus, and is capable of fermenting dextrins, resulting in very high attenuation.
