Imperial Yeast's G01 Stefon is a traditional Hefeweizen strain that is ideal for any Weizen beer need. It has been used to produce world-class Weizen beers because it is balanced with mild clove and prominent banana esters. It will produce a slightly higher level of acidity and will give your beer a super crisp finish producing amazing beers. Slightly under-pitching will help increase the banana character.
