White Labs California V Ale Yeast (WLP051) is a big ester producer that showcases notes of cherry and apple. Although it shares a name with WLP001 California Ale Yeast, WLP051 California V Ale Yeast is more similar to an English Yeast Strain. It will typically leave some residual, lager-like sulfur compounds in finished beer.
Recent sequencing studies have shown that WLP051 belongs to the Saccharomyces pastorianus species, which is the same hybrid species as most lager strains. However, this strain has been used successfully to make ales for decades and was previously categorized as belonging to Saccharomyces cerevisiae.
WLP051 California V Ale Yeast works superbly in Pale Ales, Blondes, and Brown Ales due to the notes of cherry and apple.
