
Charlie's Fist Bump Yeast WLP1983
White Labs Charlie's Fist Bump Yeast (WLP1983) was previously called WLP862 Cry Havoc Lager Yeast. It is licensed from it's namesake Charlie Papazian. The recipes in Papazian's books "The Complete Joy of Homebrewing", "The Homebrewer's Companion", and "Microbrewed Adventures" were all originally developed and brewed with this yeast. The magic of this yeast is that it can ferment at both ale and lager temperatures which means this allows you to produce diverse beer styles without hassle.
Since this yeast strain will work with both Ales and Lagers the possibilities are endless. Some of the best results have been with English Pale Ales, American Lagers, American Light Lagers, Bocks, Bohemian Pilsners, Doppelbocks, Marzens, Munchen Helles, Munchner Dunkels, Schwarzbiers, and Vienna Lagers.

Optimum Ale-Style Primary Fermentation Temperature: 68-73F
Optimum Cellaring Temperature: 50-55F (but Altbiers can be cellared at lagering temperatures)
Lagers:
