White Labs Edinburgh Scottish Ale Yeast (WLP028) will produce underlying esters of pear and melon making it work well with hop and malt derived notes. It has a medium to high alcohol tolerance and is extremely versatile. It can be neutral at the low end of the recommended fermentation temperature range or it can provide more esters at the higher range.

Due to the high alcohol tolerance it is well-suited for strong styles like Scotch-Style Ales and Barleywine Beers. Not only is it a yeast that can be used in Ale production it also works in Braggots, and has even been known for its use with Bourbon Whiskey and Scotch Whisky.

WLP028 Edinburgh Scottish Ale Yeast works great in many other beer styles including: American Ambers, American Brown Ales, American IPAs, American Pale Ales, American Porters, Barleywine Ales, Cream Ales, Dusseldorf Altbiers, English Brown Ales, English IPAs, English Old Ales, English Pale Ales, ESBs, Foreign Export Stouts,  Imperial Stouts, Irish Dry Stouts, Irish Red Ales, Kolschs, Oatmeal Stouts, Ordinary Bitters, Scotch Ales (Wee Heavys) Sweet Stouts, and Wheat Ales.

Alcohol Tolerance: Medium-High (8-12%)

Optimum Fermentation Temperature: 65-70 F
