Hefeweizen Ale Yeast WLP300
White Labs Hefeweizen Ale Yeast (WLP300) is an extremely popular German strain and is used in the production of traditional authentic hefeweizen. This strain produces a high level of isoamyl acetate, giving the resulting beer notes of banana. It has a balanced phenol production and produces notes of clove. It manages to balance the banana and clove perfectly resulting in the banana forward flavor that we all crave with a true hefeweizen. There is low flocculation that results in the desired cloudy look that is appropriate for the German Wheat Beer Style.
The pitching rate and temperature will dramatically affect the flavor and aroma of this strain. Traditional brewing techniques suggest underpitching in order to produce more classic characteristics of the style.
WLP300 Hefeweizen Ale Yeast is POF+ meaning that it will contribute phenolic characteristics to finished products.
We recommend only using this strain for Hefeweizen beers.
