Pediococcus Damnosus 5733


The Wyeast 5733 Pediococcus damnosus is a lactic acid bacteria that is used in the production of Belgian style beers where additional acidity is desirable. It is often found in Gueuze and other Belgian Style Beers. The acid production will increase with storage time. It may also cause "ropiness" and it will produce low levels of diacetyl  with extended storage time.

Optimal Temperature Range: 60-95 F
