Brett Blend #3 Bring on da Funk OYL-212
Omega Yeast's OYL-212 Brett Blend #3: Bring on da Funk is a blend of several different strains. Two Saccharomyces strains that originate in Brett Blend #1 OYL-210 are combined with both Brettanomyces bruxellensis and Brettanomyces lambicus, and then these three are combined with two additional Brettanomyces that have been isolated from a Brett-famous Colorado brewery. Finally all of these strains are combined with two more Brett isolates from an "intense" Belgian source to all come together and create a funky, fruity, complex 8-strain composition. The Brett character of this blend will develop over time, and if exposed to oxygen acid production will also occur.

Optimal Temperature Range: 68-80F
Alcohol Tolerance: 11%
This strain tests positive for the STA1 gene, an indicator of Saccharomyces cerevisiae var. diastaticus, and is capable of fermenting dextrins, resulting in very high attenuation.
