Cocoa (Cacao) Nibs

Cocoa Nibs (also known as Cacao Nibs) are pieces of cocoa beans that have the bitter, complex flavor of unsweetened dark chocolate but they have a chewy texture that is still firm, the texture is reminiscent of coffee beans. You can toast them in a dry skillet before use to tame the bitterness and give a small amount of nuttiness. They can have a small fruity component to a trained palate. They are essential in making a Chocolate Stout!
