Jovaru Lithuanian Farmhouse OYL-033

Omega Yeast's OYL-033 Jovaru Lithuanian Farmhouse has been created from an exclusive partnership with the famed Jovaru® Brewery's "Queen of Lithuanian Farmhouse Beer". JOVARU® is an ALDONA UDRIENĖ® yeast strain that originates from the famous JOVARU® Brewery that has been in operation since the mid-19th century.

This unique yeast strain complements farmhouse beers with citrusy esters and restrained phenols. It will produce a character of lemon pith, black pepper and creates a soft mouthfeel.

Flocculation: Medium-Low

Attenuation: 80-85%

Optimal Temperature Range: 70-95F

Alcohol Tolerance: 10%

This strain tests positive for the STA1 gene, an indicator of Saccharomyces cerevisiae var. diastaticus, and is capable of fermenting dextrins, resulting in very high attenuation.
