Belgian Wit M21 (10 grams)
Mangrove Jack's M21 Belgian Wit is a traditional top-fermenting yeast that has a good balance between not only fruity esters but warming spice phenolics. It will leave some residual sweetness and will drop and become bright if left to age long enough. There is a hint of bubble-gum character that works surprisingly and exceptionally well with botanics.
The Belgian character presented by this strain is phenolic and dry, fruity and very complex. It has a smooth mouthfeel that is light, dry and crisp. It can become stressed and can struggle with extremely high alcohol beers, so styles over 8% may not be the best choice for this strain.
It is suitable for a large range of Belgian Beers.
