New World Strong Ale M42
Mangrove Jack's M42 New World Strong Ale is a top fermenting ale yeast strain that will ferment with a neutral yeast aroma. This neutrality will ensure the full character of the malts and hops are prominent in each beer you make with it, in fact it will even enhance the aromas and increase their earthy, nutty, orange peel and mild spice characters. The esters will be nearly absent in normal strength beers that are fermented cool (below 68F).
Beers made with M42 will finish dry, but don't worry very light beers will not be thin or watery. The mouthfeel will be light and soft on the palate with low acidity and a smooth non-astringent texture. This strain is highly flocculent and resilient and is not prone to autolysis. With higher alcohol beers ester formation will be slightly elevated with pleasant ripe apple and pear dominating as well as some faint banana.
As with high alcohol beers the alcohol should be warming not hop and beers made with this strain will be dry with a perception of malt sweetness surviving in the aftertaste as well as the malt character and complexity.
It is a great choice for ales of all strengths and especially cask or bottle conditioned beers.
