Aztec™ is a USA grown hop that has an alpha acid range around 3.73% and a beta acid range around 3.77%. It is a neomexicanus hop that was found wild in the mountains of New Mexico.
Aztec is an incredibly complex hop that carries primarily flavors of lemon in various forms. It has primarily been described as having notes of lemon pepper, lime zest, lemon candy and even jalapeno.
However brewer's have given tasting notes to include lemon blam, black pepper, lemon pepper, lemon, herbal cilantro, agave, lime zest, green tea, candied lemon, lemon funk, lemon juice, lemon oil, lemon rind, pledge, lemon peel, lemon sage, honeysuckle, spicy, pepper, juniper berry, juniper, lemon bar, blackbery, orange zest, pine, resin, tangerine, lemongrass, lemon head candy, lemon candy and chamomile.
Aztec™ could work as an interesting addition in your next IPA or possibly a spicy summer Saison or Wheat Beer!
