Bananza™ Ale OYL-400
Omega Yeast's OYL-400 Bananza™ Ale is a new original yeast strain that will produce ripe banana esters with a hint of pear. This yeast is derived from a Hefeweizen strain, but unlike its parent it is more versatile due to the non-phenolic nature of this yeast which deems it incapable of producing clove flavors that would mask its pure banana profile. For the prime banana flavor to be imparted you should pitch this yeast at 68F and let it free rise to 72-76F.
It is a standout yeast for use in Pastry Stouts, Milkshake IPAs, and other modern ales.
Optimal Temperature Range: 64-75F
Alcohol Tolerance: 10%
