The Wyeast 3944 Belgian Witbier is a yeast strain that is incredibly versatile and can be used in a wide variety of Belgian style ales. It will produce a complex flavor profile that will be dominated by spicy phenolics with low to moderate ester production. If you are looking for a delicate clove profile that will not be overshadowed by esters, this is the strain to choose!

It will ferment fairly dry with a slightly tart finish that compliments the use of oats, malted and unmalted wheat in your grain bill. It is a true top cropping yeast that requires full fermentor headspace, meaning 33%.

Optimal Temperature Range: 62-75 F

ABV: 11
