Brett. Claussenii OYL-201


Omega Yeast's OYL-201 Brettanomyces claussenii is actually the mildest strain on the Brettanomyces funkiness spectrum. It presents more as a leathery earthiness with a touch of pineapple. Both of these characteristics are largely contributed by the aroma itself. It works best as a secondary yeast.

You may also want to use OYL-202 Brettanomyces bruxellensis, OYL-203 Brettanomyces lambicus, or any of the three Brett Funk Blends, OYL-210, OYL-211, and OYL-212.

This strain is not intended to be used as a primary fermentation yeast.

Attenuation: 85%+

Optimal Temperature Range: 68-85F

Alcohol Tolerance: 10%
