French Saison OYL-026
Omega Yeast's OYL-026 French Saison is a perfectly citrusy, lightly phenolic saison strain. It is so attenuative and reliable in performance that people joke it could ferment a shoe! It will result in great body consistency making it a good choice for any of the characteristically aromatic Belgian Styles and making it highly compatible with hops and spice aromas. The attenuation is 80-90% or more with this strain.

Alcohol Tolerance: 12%
This strain tests positive for the STA1 gene, an indicator of Saccharomyces cerevisiae var. diastaticus. This strain may have the ability to metabolize dextrins over time, resulting in higher than expected attenuation.
