Green Peppercorns are the fruit of the typical peppercorn that is picked before they are ripe and uncooked before they are then dried. The spicy heat that black peppercorns are known for are a bit more restrained, and in fact they are even more subtle than white peppercorns, yet they retain an almost jalapeño or even serano like quality to them.
They are best used when ground just before adding them into your boil. They can be used in a Saison with wonderful results.
