Particle Wave JY303 is Jasper Yeast Labs 100% natural, non-GMO thiol producing yeast. Genetically modified thiol producing eyasts can be very active in their thiol releasing activity, espeically if genes from bacteria are expressed. That (artifical) activity can release a large amount of sulfur compounds, potentially resulting in a burning, unpleasant and artifical aroma. This strain is not genetically modified and is naturally equipped with thiol releasing activity, resulting in much less sulfur production and a more pleasant thiol aroma.

The strain produces citrus, pomelo and pineapple aromas and flavors depending upon the ingredients used by the brewer.

It is not the best attenuating strain, so do not let the jackets come on at the end of fermentation and let it rise to the mid 80's (about 30°C). If you want to go over roughly 1.074 SG (18°P) you will have to make yoru wort very fermentable.

Jasper Yeast Packets are suitable for up to a 10 gallon batch with a single pitch with a starting gravity of >1.055. They contain at least 200 Billion yeast cells.

Hazy IPA strains by Jasper Yeast Labs are known for their fruity, juicy and hazy qualities. NE Style IPA's are the result of a combination of specific malts, hops, yeast and process techniques. The strains classified under Hazy IPAs by Jasper exhibit strong biotransformative properties, a process where hops added at a specific time int he fermentation process will interact with yeast to maximum fruity-citrus character, increasing the concentration and resulting flavor from hop oil components like geraniol, linalool, and citronelle, in the finished beer.
