Roeselare Ale Blend 3763
The Wyeast 3763 Roeselare Ale Blend yeast is actually a blend of lambic cultures that will produce beer with a complex earthy profile and a distinctive pie cherry sourness. It is composed of a blend of a Belgian style ale strain (Saccharomyces cerevisiae), a sherry strain, two Brettanomyces strains, a Lactobacillus strain and Pediococcus culture. This blend allows this strain to produce the desirable flavor components of these beers as they are brewed in West Flanders. It will produce a very dry beer because of the super-attenuative nature of the mixed cultures.
To really let the full flavor profile and acidity to develop aging up to 18 months is required. Propagation of this culture is not recommended due to the delicate nature of this blend, and it will result in a change of the proportions of the individual components.
Optimal Temperature Range: 65-85 F
