Sorachi Ace (US)

Sorachi Ace is a bittering hop that can also be used as a dual purpose hop. Originally from Japan it is frequently grown and availabe from the USA. It has an alpha acid  that can range from 11 to 16% and a beta acid of 6-8% for Japan grown hops and 8-12% for USA grown hops.

It was developed in 1984 for Sapporo Breweries Ltd and is very popular for its unique citrus fruit and herbal aromas.

It has an aroma of Lemon, Citrus, Herbal, Dill, and Lime. Sorachi Ace is sweet and fruity with notes of overripe oranges fermented fruity juice, lychee, maple syrup, lemongrass and fruit punch. There are also woody aromatics that are almost exotic (like frankincense) that contrast citrusy green vegetal and spicy herbal components like ginger, curry, butter, vanilla essence and Japanese natto.

It is a great choice for use in Saisons, Belgian Witbiers, IPAs & Exotic IPAs, American Pale Ales, Lagers, and Belgian Ales.

A possible substitution for Sorachi Ace is Southern Cross.

It is available occasionally in Lupulin Powder/Pellet form from brands like Cryo-Hops and LUPOMax. It is frequently available as a hop oil/extract and in whole leaf hop form.
