The Wyeast 4267 Summation Red is a Saccharomyces cerevisiae. It will a distinctive intense berry, graham cracker nose. It is jammy and rich with a very smooth complex profile that is slightly vinous. It is well suited to higher sugar content musts.

Residual Sugar: 0-0.5%

Rate of Fermentation: Moderate

Foam Production: Moderate

Volatile Acid Production: High

Sulfur dioxide (SO2) Production: Very Low
