Imperial Yeast's W04 Paramount is a specialized wine strain that is perfect for seltzer fermentations. It is clean, efficient and will produce an excellent seltzer. It is a very clean and aggressive fermenting yeast. With the correct levels of nutrients it will have low fusel levels.
As will all seltzer fermentations the use of nutrient is a must!
It is produced on Imperial's Gluten Free media and therefore is not recommended for use with a wort based fermentation.
Optimal Fermentation Temperature: 65 - 90F
