Lallemand WildBrew Philly Sour is a unique species of Lachancea selected from nature by University of the Sciences in Philadelphia, PA. It will produce moderate amounts of lactic acid in addition to ethanol in one simple fermentation step.
It was the first yeast in the WildBrew Series and is a great choice for innovative, sessionable sour beers that have refreshing acidity and notes of stone fruit.
It has a high attenuation, high flocculation and good head retention, making it an ideal choice for traidtional styles like Berliner Weiss, Gose, American Lambic Styles, American Wild Ales. It also has a resistance to hops which make it perfect for Sour IPAs.
