Napoleon B64
Imperial Yeast's B64 Napoleon is the classic strain used. to produce French Saison where a balance of fruit esters and spicy phenols are necessary. Since this yeast strain is an insane wort attenuator it will destroy the sugars in your beers (even the ones in which most brewer's strains have no interest), it will produce a very dry, crisp beer with nice citrus aromas balanced by subtle black pepper phenols. The yeast settling times can be long and it will typically require filtration for bright beers.
It's a fabulous choice for Belgian Saisons and Farmhouse Ales.
