Sylva™ (Southern Saaz)
Sylva™ is an Australian aroma hop that has an alpha acid range from 4 to 7.3% and a beta acid range of 3-7%. It is sometimes seen under the name Southern Saaz.
There are subtle and complex flavors in this hop that are reminiscent of the earth, think fresh-cut timber and the smell of the forest. There is almost a subtle hoppy bohemian-style aroma.
It is a great choice for use in Pilsners, Lagers, California Commons, and Pale Ales.
If you are looking for a substitute we recommend Hallertau Mittelfruh (GR), Helga, and Saaz (US), Saaz (CZ), Northern Brewer (GR), or Northern Brewer (US).
