Tardif de Bourgogne is a French grown aroma hop that has an alpha acid range of 2.2-5.3% and a beta acid of 3.1-5.8%. It is a rare French noble variety that is often grown in Germany now. It was commercailly successful in lager beers prior to the introduction of Strisselspalt. The name loosely translate to "late harvest of Burgundy".
Tardif de Bourgogne features notes of pine, frankincense and rose petals. It has a unique aromatic flavor that can also express as lavender, honeydew, honeysuckle, red berries and chamomile tea.
It is a good choice for Ales and Lagers alike and is a great old school hop that can be used universally in classic styles and in new age beers.
Strisselspalt is the best substitution for Tardif de Bourgogne.
