Cubeb Pepper

Cubeb Pepper is quite unique! As a member of the pepper family it has the traditional peppery, slightly bitter and pungent flavor that you would expect but it has a hint of allspice and nutmeg. Some even describe it as woody with a hint of camphor.

In fact a certain well known Gin named for a "blue crystal" uses paradise seeds and cubeb pepper as their botanicals. It is best used in the last 10-15 miutes of boil with no more than 1 ounce per 5 gallons.
