Hefeweizen Ale I OYL-021
Omega Yeast's OYL-021 Hefeweizen Ale I is a classic German wheat strain. It is cloudy and a big top cropper. It presents the anticipated banana and clove notes, while the esters turn up with increased temperatures, woort density and decreased pitch rates, or they can stay muted when at lower temperatures when the clove phenols really shine.
You must be careful to not over-pitch as it can lessen the banana, unless that is what you are going for. The sulfur conditions out.
You could also use Belgian Ale A OYL-024 for an alternate with possibly even more complexity.
