Sovereign (TA200)
Sovereign is a UK grown aroma hop that has an alpha acid range of 4.5-6.5% and a beta acid of 2.1-5.5%. It is known under Cultivar/Brand ID 50/95/33. It is the granddaughter of Pioneer and is often used in conjunction with Goldings in English-Style Beers.
Aromas of Sovereign include pleasant but intense fruity flavors with mild floral, grassy, herbal, pear and mint characteristics all blended with classic well-rounded green tea bittering aromas. The combination of floral components with swet cookies and marzipan create a special aroma. There is also sweet cherry, quince, spicy licorice and woodruff as well as sweet fruity notes of banana, pear and cherry. The marizpan, caramel, gingerbread, cocoa and yogurt mixed with black tea and tomato leaves come across as subtle accents to create this one of a kind hop.
It has an aroma that includes complex, moderate to intense fruit - peach, red currant, berry, cherry; it is not quite balanced, with delicate tangy spice and suggestions of green tea leaves, floral, grass, herbal, mint and pear.
It is a great choice for use in Hoppy English Ales, Non-Traditional Lagers, Hybrids, English Bitters, Lagers, ESBs, and Pale Ales.
