Taiheke® (NZ Cascade)
Taiheke® is a New Zealand dual purpose hop that has an alpha acid range from 5 to 9% and a beta acid range of 5-5.5%. It can be used successfully throughout the brewing process. It is owned by NZ Hops Ltd. under USDA 56013.
Taiheke® is known for its remarkable levels of citrus notes that tend more towards tropical fruit like grapefruit, lemon and lime. There are notes of floral aspects, and a citrus profile with a hint of spice.
It is more subdued than the American Cascade (US) but it still contains those same pleasant and distinctive flavors but with higher alpha acids. It will impart a moderate bitterness.
It is a great choice for use in Ales, Pale Ales, IPAs, Barleywines, American Pale Ales, Imperial Stouts, Lagers and NEIPAs.
Substitutes for Taiheke® include Cascade (US), Hallertau (US), Goldings (US), Ahtanum® and Centennial (US).

Humulene: 10-20%
Caryophyllene: 5-10%
Farnesene: 0-5%
All Others (including β-pinene, linalool, geraniol & selinene): 5-35%
