Wakatu™ (Hallertau Aroma)
Wakatu™ is a New Zealand dual use hop that has an alpha acid range from 4.5 to 8.5% and a beta acid range of 7.5-9.5%. It is sometimes referred to as Hallertau Aroma, New Zealand Wakatu, or Hal Aroma and is a triploid hop. It is owned by NZ Hops Ltd under the Cultivar/Brand ID 77-05. It was renamed to Wakatu™ in 2011.
There is a nice balance of the oils that give this hop an understated floral aroma that is mixed with a pungent fresh lime aroma. It is noted for its flavor stability, and can be used at any stage in the boil and has been dry hopped with great success.
Wakatu™ has a pronounced earthy-sweet floral Hallertau-like character that is underscored by tropical fruit notes. There are restrained floral notes that are highlighted by the freshly zest lime aromas.
It is a great choice for use in these beer styles: Lager, Pale Ale, Pilsner and Belgian Ale.
Possible subtitutions for Wakatu™ include Hallertau Mittelfruh (GR) and Nelson Sauvin™.
