Nelson Sauvin™ (NZ)
Nelson Sauvin™ is a New Zealand dual purpose hop - although it is primarily used as an aroma hop - that has an alpha acid range from 9 to 13% and a beta acid range of 5-8%. It is most notable for its similarity to Sauvignon Blanc Wine, which this hop has a similar flavor and aroma to. It is owned by NZ Hops Ltd and released under the Cultivar/Brand ID 85-03-06.
The essential oil profile of Nelson Sauvin™ displays characteristics of fresh crushed gooseberries which is also the common descriptor given to the grape variety Sauvignon Blanc. It may require efficient application in your brew house meaning this unique dual purpose hop can be used to produce big punchy ales as well as ssubtle aroma driven lagers. The fruitiness can be a little overpowering but if you have a penchant for bold hop character there is a lot of uses for this hop!
The profile of Nelson Sauvin™ is extremely complex and works beautifully as an aroma hop, a flavor hop and a bittering hop. The low cohumulone is responsible for its smooth bitterness. There are rich, fruity, gooseberry and distinctive white-wine flavors of grapes.
It is a great choice for use in American Pale Ale, American Ale, IPA, Lager or Pale Ale.
If you are looking for a substitute we recommend Hallertau Blanc, Enigma™, Motueka™, Riwaka™, Pacific Jade or Pacifica™ .
Nelson Sauvin™ is frequently combined with other hops in recipes and is most often seen in combinations with Citra®, Simcoe®, Strata® (X-331), Mosaic® (HBC 369), Galaxy®, Pacific Jade, and Motueka™.
