Ella™ (Stella)
Ella™ is a dual purpose hop that is grown in Australia. Its cultivar/brand ID is 01-220-060 and is owned by Hop Products Australia (HPA). It has an alpha acid range from 13.3 to 19.2% and a beta acid range of 4-7.8%. It was formerly known as Stella.
This hop has high levels of oils meaning it can significantly change character dependent upon how you use it. It has a smooth bitterness or can be added late in the boil for floral and star anise tones in the flavor and aroma with strong tropical and grapefruit undertones.
It is reminiscent of a noble variety with spicy, floral and star anise tones that really shine when used in low quantities, but when increasing this or using this hop as a dry hop, it will hold its own with robust malt and will shine through with its tropical and grapefruit notes especially in larger additions.
There is a pleasant floral aroma that is backed by soft spice that often gets described as distinct grapefruit and tropical flavors. The distinctly floral aromas are unrivaled yet there is also sweet peach, woody, lavender and passionfruit tones with distinct overtones of grapefruit and lime.
It is a great choice for use in Lagers, Pilsners, Pale Ales, and Stouts.
