Topaz™
Topaz™ is an Australian dual purpose hop that has an alpha acid range from 13.7 to 20.1% and a beta acid range of 4.9-7.9%. It is owned by Hop Products Australia (HPA) under Cultivar/Brand ID TC-85-70.
There are elements of clove-like spice, resinous grassy tones and a light, lychee-esque fruitiness. When used as a dry hop it contributes resinous grassy tones. There are earhty notes of traditional English varities with fruit aromas of blackberry, gooseberry, blueberry, black currant and passionfruit all with resinous and grapefruit undertones.
It has a fruity profile that really shines when it is used in higher gravity recipes. In larger additions and these higher gravity beers the flavor qualities really come out as pleasant and more pronouned light tropical fruit.
Topaz™ is a great choice for use in IPA, American Pale Ale, Bitter, and Amber Ales.
If you are looking for a substitute we recommend Galaxy®, Citra®, Cascade (US), Riwaka™, Rakau™ (NZ), or Amarillo®.
Topaz™ is nicely complemented when paired with Galaxy® and Vic Secret.
