Imperial Yeast's A31 Tartan is a traditional Scottish brewers yeast strain that is well suited for malt forward beers. It has a clean fermentation character and will work well in a variety of styles. If you desire a higher ester profile you should use this strain at the top end of the temperature range.

If you need a substitution we recommend Imperial A01 House or A10 Darkness, Wyeast Scottish Ale 1728, White Labs Edinburgh Scottish Ale WLP028, or Omega Scottish Ale OYL015.

It's a fantastic choice for malt forward styles but practically any beer will work.

Flocculation: Medium

Attenuation: 70-75%

Optimal Fermentation Temperature: 65 - 70F

Alcohol Tolerance: 10%
