Idaho Gem®
Idaho Gem® is a USA dual purpose hop that has an alpha acid range from 11 to 14.5% and a beta acid range of 4.5-7%. It can be used successfully throughout the brewing process. Idaho Gem® has rich levels of sweet fruit forward aromatic oils that make it a great choice for late kettle additions or even dry hopping - either individually or blended with other hops - in a wide variety of styles. It is owned by Gooding Farms and has a Cultivar/Brand ID of 2012G01.
It presents with aromas of stone fruit, red berry, citrus, mojito, mint, and powdered sugar. The flavors are soft and full, bright and remarkably smooth, while giving forefront impressions of fruit candy - like Juicy Fruit and Jolly Rancher - all while being supported by citric grapefruit notes.
It is a great choice for use in IPAs and Pale Ales.
Possible hop substitutions for Idaho Gem® include Azacca®, El Dorado®, Cashmere, Citra®, Idaho 7™ and Cascade (US)/Cascade (BC).
