Columbus (CTZ) (US)
Columbus is a bittering hop although it can also be used as a dual purpose hop. Grown in the US it is also known as CTZ or Tomahawk. It is technically genetically distinct from Zeus but it is so similar that they are considered to be the same hop. Columbus and Tomahawk were both filed for distinct patents at the same time from two different hop farms but it was determined that they were the same genetic hop and therefore it was reclassified as CTZ. It has an alpha acid that can range from 12-18% and a Beta Acid of 4.5-6%.
It has a clean bitterness and pungent aromas of earthiness, black pepper, licorice, spice (curry), and subtle citrus. The floral and citrus aspects of the aroma and flavor can be pungent at times. It is well known for its vegetal notes but there are also some sweet fruit, floral, citrus and herbal aromas that combine to create a Dank hop with touches of Red Fruit.
It's a great choice for Bitter Ales, American IPAs, American Pale Ales, IPAs, Stouts, Barleywines, Lagers, Imperial Ales, and Pale Ales.
If you need a hop substitute for Columbus using Columbus (BC), CTZ, Tomahawk, Zeus will definintely work but you could also try Centennial (US), Centennial (BC), Chinook (US), Chinook (BC), Galena, Nugget (US), Nugget (BC), or Millennium as well.
Columbus is available in Lupulin Powder/Pellet form from brands such as Cryo-Hop and LUPOMax. It is available often as a hop oil/extract and is frequently available in Whole Leaf Form.
Columbus pairs well with many hops and is frequently seen in conjunction with Centennial (US), Centennial (BC), Chinook (US), Chinook (BC), Citra®, Simcoe®, Cascade (US), Cascade (BC), Amarillo® and Amarillo® (GR).
